Impossible Vegetable Pie...Betty Crocker made this easy;)

Ingredients:
2 cups freshed chopped broccoli or cauliflower OR 10 oz. frozen and thawed broccoli or cauliflower; DO NOT cook though
1/2 cup chopped onion
1/2 cup red bell pepper
1 cup shredded cheddar cheese
1 1/2 cups skim milk
3/4 cup egg product
3/4 cup Bisquick
1/2 tsp salt
1/4 tsp pepper

Steps:
Heat oven 400F
Grease glass pie plate
Heat 1" salted water (1/2 tsp & 1 cup water) to boiling and then add fresh broccoli
Cover and heat to boiling
Cook about 5 minutes or until almost soft; drain
Mix broccoli, bell pepper, and cheese in a large bowl.
Stir in remaining ingredients.
Pour into pie plate
Bake 35-40 minutes/until knife comes out clear when inserted between center and edge.
Cool 5 minutes

*Spinach pie: sub 1 pkge (10 oz) thawed spinach for broccoli- do not cook.
Omit bell pepper and use swiss cheese instead of cheddar; add 1/4 tsp nutmeg and bake about 30 minutes.
