Individual Shepard's Pies
Ingredients:
4 servings of packaged instant mashed potatoes          
skim milk
1 10oz. package frozen peas and carrots, thawed       
1 1/2 c cubed cooked lamb or beef
1 12oz. jar beef gravy
1/2 tsp dried basil, crushed
1 tbsp finely shredded cheddar cheese
Steps:
Prepare mashed potatoes according to package directions, except omit butter and substitute skim milk for milk; set aside.
In mixing bowl, stir together vegetables, meat, gravy, and basil.  Divide among four 12-16 oz. casseroles.  Top each casserole with potaotes and cheese.
Bake uncovered in a 350F oven for 30-35 mintues or until heated through.
Microwave:
Prepare potatoes as directed above. Microwave frozen vegetables on 100% power for 2-4 minutes or until crisp-tender; drain. Stir in meat, gravy, and basil. Divide among 4 12-16 oz. casseroles. Top with mashed potatoes and cheese.  Cook on 100% power for 8-10 minutes or until mixture is heated through.
