Rice Pudding
1/4 c rice         1/4 c granulated sugar           1/2 tsp salt     1/4 c raisins (optional)
2 c milk           1/4 tsp vanilla
Cook rice, salt and milk in double broiler for 45 minutes or until tender. Stir occasionally with a fork, add more milk of it becomes dry. Add the sugar and raisins, if desired, and cook 5 minutes longer. Add vanilla and serve:) Serves 4.

                                                          Simplest Candy
1 c semi sweet choclate chips            1 c nuts or fruit or your choice!
Microwave chocolate 1 1/2 minutes on high. Mix in nuts. Spoon onto wax paper and refrigerate. Enjoy when cooled and set! **Can also try a colored white chocolate, use food coloring when microwaving white chocolate**
                                                       Blueberry Streusel
1/2c butter or margarine           1/2 c sugar       1 large egg         2 c flour       2 tsp baking powder
1/2 tsp baking soda                  1/4 tsp salt       1/2 c buttermilk       2 c frozen or fresh blueberries
Topping: 1/4 c cold butter or margarine     1/2 c flour  1 tsp cinnamon    1/2 tsp nutmeg
1/2 c sugar
In large bowl, cream butter and sugar together. Beat in egg. Mix dry ingredients in another bowl and add, alternating with buttermilk, to butter mixture. Pour into well-greased 9x13" pan. Top with blueberries. Next, mix topping: flour, sugar and spices. Cut butter into tablespoons and blend into dry ingredients with a pastry blender. Mixture shouel be crumbly. Sprinkle over blueberries. Bake at 350F for 35 minutes.

                                                                 Fudge
2/3 c milk             1-2 squares chocolate or 3-4 Tbs cocoa
Place in saucepan over low heat, stirring until chocolate is melted and mixture is smooth.
Stir in :   2 c sugar    1 tsp corn syrup          dash of salt
Cook gently, stirring from bottom occasionally, to 236F  ( a little dropped in cold water forms a soft ball). Remove from heat.
Add: 2 Tbs butter.  Cool without stirring, to lukewarm and add:  1 tsp vanilla.
Beat until thick and no longer glossy. Spread in butter pan and cut into squares and enjoy with a nice glass of milk.
                                                  Fat Free Chocolate Cupcakes
1 small box Jello Cook & Serve chocolate pudding powder                     1/2 c nonfat dry milk powder
1 Tbs Hershey's unsweetened cocoa                1/2 c sugar                    1 c self-rising flour
4 egg whites - beat until stiff with 1 pinch salr in 1 1/2 qt. bowl              1 tsp vanillla     
4oz. applesauce                 1/4 tsp baking soda
In medium bowl, combine Jello powder, dry milk, cocoa, sugar and flour. Set aside. With electric mixer, beat alternately into egg white mixture a cup at a time with the vanilla, applesauce and baking soda, whick have been mixed together.  Beat 2 minutes after last addition.  Divide batter equally between 12 paper cupcake wells. Bake at 350F about 18-20 minutes or until tester comes out clean. Cool in pan or on wire rack.
                                                       Nancy's Bread Pudding
                             You can easily cut this recipe in half to accommodate smaller crowds;)
4 loaves bread, dry (can use mini french rolls or hoagie buns, 1 bun = 1 loaf)
4 c half and half                            1 1/2 c sugar                            1 stick butter, divided
2 tsp nutmeg                                   2 tsp cinnamon                       2 Tbsp vanilla extract
6 eggs, beaten
Preheat oven 350F. Tear bread into 2" pieces. In a large bowl, add half and half, sugar, nutmeg, cinnamon, vanilla, and 1/2 stick butter. Add eggs and mix well. Add bread and allow it to sit for 5 minutes.
Grease a 9x12x2" pan and add mixture. Dot the top with extra butter.
Bake 1 hour. (For half of the recipe, bake 30 minutes)
