Hawaiian Bread 6 c plain flour 3 eggs 1 c pineapple juice 1 c water 3/4 c sugar 1/2 tsp ginger 1 tsp vanilla 2 pkg yeast 1 stick margarine, melted
Steps: Beat eggs; add pineapple juice, water, sugar, ginger, vanilla, and melted margarine. Put 3 c flout in a large mixing bowl. Add egg mixture and stir until well mixed. Sprinkle in yeast, 1 pkg at a time, mixing well. Gradually add other 3 c flour. Batter will be hard to mix with a spoon. You may have to use hands. make sure it's mixed well. Leave batter in bowl and cover with cloth and place in warm spot. Let rise 1 hour. Remove from bowl and knead in 1/2 c flour; knead about 10 times. Divide into 3 equal parts and place in well greased round cake pans. Cover and place in warm place and let rise about 1 hour. Bake at 350F 25-30 minutes. |

Old Fashioned White Bread 1/2 c milk 3 Tbs sugar 2 tsp salt 3 Tbs butter or margarine 2 pkg active dry yeast 1 1/2 c water water 5-6 c all-purpose flour
Steps: Combine milk, sugar, salt and butter in small saucepan. Heat over low heat utnil butter melts and sugar dissolves. Cool to luke warm. Dissolve yeast in warmed water bowl. Add lukewarm milk mixture and 4 1/2 c flour. Mix this in electric mixer (speed 2 works fine) and mix 1 minute. Continuing on this speed, add remaining flour, 1/2 c at a time, until dough clings to hook and cleans side of bowl. Knead on this spped for 2 minutes longer or until dough is smooth and elastic. Dough will be slightly sticky to touch. Place ina greased bowl, turning to greas top. Cover and let rise in warm place utnil doubled in bulk, about 1 hour. Punch dough down and divide in half. Shape each half into a loaf and place in a greased 8.5x4.5x2.5" loaf pan. Cover and let rise in warm place for another hour (double in bulk) Bake at 400F for 30 minutes. Banana Bread 1 3/4 c all-purpose flour 3/4 tsp baking powder 1/2 tsp salt 1 1/4 tsp cream of tartar 2 eggs beaten 1/2 c vegetable oil 2 ripe mashed bananas
Steps: Combine dry ingredients in a large bowl. make a well in the center of mixture. Combine remaining ingredients; add to dry mixture in the well and stir until moistened. Pour batter into a greased 9x5x3" loaf pan. bake at 350F for 45 minutes. Cool in pan 10 minutes, then cool on wire racks. |

Pumpkin Bread 3 1/2 c flour 4 eggs 3 c granulated sugar 1 c crisco oil 1/2 tsp salt 2 tsp cinnamon 2 c pumpkin 2 tsp nutmeg 1 c nuts 2 tsp baking powder 1 c raisins Steps: Blend well all ingredients. Fill 2 loaf pans 1/2 full. Bake at 350F for 1 hour. Cool 10-15 minutes before removing. Mary Jo Nichols |

Cranberry-Orange Bread 3/4 c sugar 1 egg 3 c bisquick 3/4 c nuts 1 1/4 c orange juice 1 c chopped fresh cranberries 1 Tbs grated orange rind Steps: Mix sugar, egg, OJ, orange rind, and bisquick in bowl and beat 30 seconds (will be lumpy). Stir in nuts and berries. Pour in greased 9x5x3" loaf pan. Bake at 350F for 50-55 minutes.

Blueberry-Oatmeal Bread 2 c all-purpose flour 1 c quick cooking oats 1/2 c sugar 1 Tbs baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp ground cinnamon 1/2 c plus 2 Tbs butter 2 eggs slightly beaten 1 c milk 1/4 c light corn syrup 1 c fresh blueberries Steps: Combine flour, oats, sugar, baking powder, baking soda, salt and cinnamon in mixing bowl. Cut in butter with a pastery blender until mixture resembles coarse meal. Combine eggs, milk and corn syrup; mix well. Add to the dry ingredients, stirring just until moistened. Fold in blueberries. Pour batter into a greased and floured 9x5x3" loaf pan; bake at 350F for 1 hour and 10 minutes, or until tester comes out clean.
