Crepes
1 1/2 c flour
2 c skim milk
1/2 c egg substitute
1 Tbs sugar
1 Tbs applesauce (no sugar added)
1 Tbs margarine
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla
Toppings: powdered sugar, ice cream, jelly/jam, fruit, whipped cream, etc.

Steps:
Mix all together in a large mixing bowl, stir with a whisk. There may be flour chunks that are hard to get out, but that's OK because they'll "cook out"
Cook on a non-stick skillet over high temp
Flip when edges curl up OR whenever they have reached the shade of light brown you desire;)
Cool on tin foil and enjoy!
Makes about 7 crepes, each 3/4 full in a ladel

              Jim's Canadian Bread
6 c flour
1 Tbs yeast (1 pkg.)
2 c warm water
2 tsp salt

Steps:
Mix yeast and water, set aside for 10 minutes
Put flour and salt in bowl and stir
After 10 minutes, put 2 mixtures together and mix well with spatula so ALL liquid is absorbed in flour
Knead dough for 15 minutes
Let dough rise for 2 hours in another bowl in a warm dry place (doubles size)
Punch dough and knead for 1 minutes
Cut dough in 2 and roll into 2 logs
Put bread in greased bread pans and let stand 1 hour in warm, dry place
After 1 hour, cut along top of risen dough balls with sharp knife before oven
Preheat oven 400F
Both pans go in for 25 minutes
Bread is done when crust is golden brown
