| Chicken and Dumplings...thanks mum! |
| Ingredients: 1 onion, chopped chicken pieces, with the bone water flour biscuit/scone mix milk salt and pepper |
| Steps: In a large, talled sided cooking pot on the stove top, cook the chicken pieces and onion in water (deep enough to cover the chicken and enough so it won't boil down) for one hour. Wait patiently with visions of a yummy meal in mind.... After an hour, remove the pot from the flame and let the chicken pieces cool until you can handle them. Remove the skin and bones from the meat. Discard any fat that is on the top of the water. Return chicken to water and let simmer. In a small bowl, mix 1/2 c flour and water until a soupy mixture is made. Add to pot. Let cook 10 minutes, stirring occasionaly. Mix 2/3 c biscuit mix and 1/2 c milk in a small bowl. Drop by spoonful onto the top of the water....dumplings are being made! Let cook another 10 minutes You're doing! Serve by breaking open dumplings and placing the chicken and broth inside. Add salt and pepper to taste:) |
