Hummingbird Cake
3 c flour                1 tsp salt               2 c sugar              1 tsp baking soda
1 1/2 tsp vanilla      1 tsp cinnamon      1 1/2 c oil             1/2 c nuts           
3 eggs                    1 8oz. can crushed pineapple (not drained)     2 c mashed bananas
Mix all ingredients together by hand. Bake in greased and floured tube or bundt pan at 300F for
1 1/2 hours. Cake will crack slightly on top. Cool in pan 1 hour before removing. Frost with cream cheese frosting:)
                                        Lemon Supreme Pound Cake
1 pkg Duncan Hines Lemon Supreme Deluxe             1 pkg instant Lemon Pudding
1/2 c crisco oil                 1 c water              4 eggs
Blend all ingredients for 2 minutes at medium speed with an electric mixer. Bake 350F 45-55 minutes. Cool 25 minutes. remove from pan. Glaze with: 1 c confectioner's sugar with 2 Tbs milk or 2 tsp lemon juice.
                                  Angel Food Cake with Tangy Fruit Topping
1 pkg Betty Crocker easy one-step white angel food cake mix
1 1/3 c large chunks peeled kiwi (2 medium)         1 c sliced strawberries
2 Tbs lime juice                 4 tsp sugar          1/2 tsp ground ginger
Make cake as directed on package.
Stir together remaining ingredients. Cover and refrigerate topping about 1 hour or until chilled. Stir topping before serving and spoon over cake slices.
Betty Crocker Recipes
                                                      Rain Forest Cake
1 c margarine      4 ripe bananas    2 c sugar      8oz. semi-sweet chocolate chips
2 eggs        1/2 c cashews        3 c flour           1/2 c Brazil nuts, chopped
3 tsp baking powder                 1 tsp baking soda
Mix all ingredients together and stir well. Bake in a greased cake pan at 350F for 40-45 minutes. For an added touch, sprinkle on brown sugar before serving.

                                                 John's Island Apple Cake

This recipe is from the WONDERFUL cooks that spent all day cooking for us on the
John's Island Summer Mission trip. This is just a taste of all the sweet and satisfying food we were given throughout that incredible week:)

Ingredients:
3 eggs                           1 c vegetable oil             2 c sugar                1 tsp salt (optional)
1 tsp baking soda            3 c flour                 1/2 tsp cinnamon           1/2 tsp nutmeg
3 c sliced apples (Red Delicious or McIntosh)
Mix everything with mixer except apples.  Then add apples and fold/stir in by hand - can use spoon.  Mixture will be stiff.
Put in a 13" x 9" sprayed pan.  Bake 1 hour or more at 350F.
Topping:
1 c brown sugar          1 stick margarine          1/4 c milk
Bring to a boil. Punch holes in the cake so the mixture, when poured on it, will be absorbed.
Pour mixture over hot cake and enjoy!
                                                      Diet Coke Cake
1 can Diet Coke
1 box chocolate/dark colored cake mix
Preheat oven as directed on cake mix box.
Mix cake mix and 10 oz. of diet coke (not the whole can!)
Bake as directed and enjoy a full flavored and moist cake with only the calories and fat of the cake mix!
Top with fat free cool whip and sliced fruit for a low calorie dessert.
Tip: Use diet Sprite for yellow/white/light colored cakes
                                                              Trifle:
                                             A definite crowd and eye pleaser!

1 Angel Food Cake
2 packets pudding mix (plus needed milk; prepare in advance as directed)
2 bags (1 lb. each ) frozen and drained fruit, or fresh, sliced fruit
1/3 c sugar
tub of cool whip
additional sliced fruit to garnish

Assemble:
Cut cake into squares/chunks and line bottom of trifle dish, or use large, tall sided glass bowl.
Top with a layer of fruit. Next, put on a layer of pudding.
Repeat process until you run out of ingredients or bowl is full.
Top with cool whip and garnish with fruit.

Suggested combinations:
Red, White, and Blue: mixed strawberries, blueberries, blackberries, white pudding, white cake. Banana Creme: sliced bananas, white/yellow pudding, white/chocolate cake.
Strawberry Shortcake: strawberries, white pudding, white/yellow cake.
Chocolate Raspberry: raspberries, white pudding, chocolate cake.
Raspberry Lemon: raspberries, lemon pie filling, lemon/yellow cake.
                                                Ashley's Missouri Trifle
1 large Sara Lee pound cake      1 jar "Mrs. Richardson's" fudge sauce    3-5 Tbsp. Kaluha
1 pkg. "Bit o Brickle" chips (reserve 1/4 pkg. for topping)     2 (3 oz.) vanilla pudding mix
2 c milk              2 c whipping cream              1 pint sliced strawberries    tub of cool whip

Cut cake into small squares and line bottom of trifle bowl.
Heat fudge sauce and mix in Kaluha (optional) and pour over cake.
Sprinkle 3/4 pkg of chips over fudge layer.
Prepare pudding with milk as directed.
Beat whipped cream until soft peaks form and pour into pudding and mix together.
Layer all this over chips. Next, layer fruit. Top with cool whip and remaining chips!
