Cranberry Biscotti
These go quick!!!
Great with coffee or milk
Ingredients:
2 c flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 c butter or margarine
3/4 c sugar
2 eggs
1 tsp vanilla
1 1/2 c Post Cranberry Almond Crunch cereal
OR use
1 1/2 cup bran flakes and
approximately 1/4 c dried cranberries or "Craisins"
Steps:
Heat oven 325F

Mix flour, baking powder, and salt in a small bowl. Melt butter a little in the microwave. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla. Gradually add flour mixture, beating well after each addition. Stir in cereal.

Divide dough into 2 equal portions. Shape dough into 2 logs, each 14 inches long and 2 inches wide, on greased cookie sheet.

Bake 30 minutes or until lightly browned. Remove from cookie sheet and place on cutting board. Cool for 15 minutes. Using a serrated knife, cut each log into diagonal slices, about 3/4 inch thick. Place slices upright on cookie sheet 1/2 inch apart. Bake 8 minutes or until slightly dry. Remove from cookie sheet. 
Cool on wire rack. Before serving decorate with melted chocolate or powdered sugar if desired.
Makes about 2 dozen.
