| Nancy's Homemade Vegetable Soup |
| Thanks Nancy!!! Ingredients and Instructions: Optional: 1 lb ground beef, browned with a couple of garlic cloves and half of an onion In crock pot: 2 28oz cans tomatoes, peeled, diced, and pureed 2 28 oz cans water Beef bouillion cubes (1 per 8 oz of liquid, so use 7 cubes; more if you want it saltier or beefier) 2 potatos, peeled and diced 3 carrots, cut into small circles 1 can each: peas, corn, green beans, lima bean, any other good vegetable... You can also use zucchini or okra, or anything else can think of! I like to add macaroni, egg, or curly noodles, and I just put them in the soup and let them cook. The more vegetables you add, the less soup-like the meal becomes. Add all of the ingredients to a crock pot and then sprinkle the following to taste: fresh or dried parsley, or some italian seasoning salt and pepper garlic salt or powder celery salt or powder onion salt or powder Taste the soup a few times while it is cooking to know if it's too flavorful and needs water, or not flavorful enough....then add what you think is lacking, usually salt, pepper, garlic or onion salt. You can cook this all day long on low or on a higher temperature until the potatos, carrots, and noodles are soft. It's really good and it comes out a little different each time. It is great served with cornbread and a salad, or a grilled cheese sandwich, and great with or without the beef. If you cook it without the beef, it's more "tomatoie" tasting and might need a little more flavor from the spices. |
