MIXED GREENS WITH HERBED VINAIGRETTE
Servings = 4 to 6

Arrange greens and tomatoes on individual salad plates; sprinkle with blue cheese.
Serve with vinaigrette.

Ingredients
6 to 8 cups mixed greens, torn
1 pint yellow pear or cherry tomatoes
½ to ¾ cup blue cheese, crumbled

Prepare herbed vinaigrette; set aside.

Herbed Vinaigrette
½ cup vegetable oil
2 Tablespoons white wine vinegar
2 Tablespoons seasoned rice vinegar
1 Tablespoon fresh parsley, chopped
1 Tablespoon fresh chives, snipped
Kosher salt and cracked black pepper to taste

Whisk together oil and vinegars.
Whisk in parsley and chives. Season with salt and pepper to taste.
