Mixed Vegetable Soup
3 cups water
1/2 cup each diced onion, celery, carrot, and seeded drained canned
Italian tomatoes
1/4 cup each frozen baby lima beans and frozen whole kernel corn
2 pkgs instant chicken broth and seasoning mix
1 tablespoon chopped fresh parley
1/8 teaspoon pepper (more to taste)
In 2 qt microwavable casserole combine all ingredients except parley
and pepper, stir to dissolve broth mix. Cover with vented plastic
wrap and microwave on high for 17 minutes, until veggies are tender,
stirring halfway thru cooking. Stir in parley and pepper
makes 2 servings - approx 1 1/2 cups each
per serving - 98 calories; 5 g protien; 1 g fat; 20 g carbohydrate; 59
mg calcium; 1137 mg sodium; 0 mg cholesterol; 2 g dietary fiber
