"Ice Cream" Sandwiches
24 graham crackers
1 1/4 c milk, 2% lowfat
1/2 tsp vanilla
3 pkg sweetener -- (to taste)
1 pkg instant pudding mix -- dry
8 oz Cool Whip LiteŽ -- thawed
Combine milk, vanilla, and sweetener. Whisk in pudding mix. (I have
used: banana, pistachio, butterscotch, chocolate fudge.) Fold in the
Cool Whip until fairly well blended.
On a cookie sheet or similar pan, lay 12 graham crackers side by side
(touching), 6 across, 2 rows--or whatever fits your pan.
Spread all of the pudding mixture over the crackers, as evenly as
possible. Cover this with the remaining 12 crackers.
Freeze. Use a sharp knife or pizza cutter to separate this into 12
sandwiches. If your freezer is especially cold, it may be necessary
to allow them to "warm" a little before cutting.
