Raspberry-Lemon Parfaits

Ingredients
1/2 cup(s) sorbet, lemon, split into 2 scoops
2 tbsp lemon curd
1/4 cup(s) sweetened frozen red raspberries
1/2 cup(s) sorbet, raspberry, split into 2 scoops
2 tbsp lite whipped topping
1/4 cup(s) raspberries
1 tbsp mint leaves, or 2 mint sprigs
Instructions
Place 1 scoop of lemon sorbet in each of 2 dessert or wine glasses. Top each with 1 tablespoon of lemon curd, 2 tablespoons of frozen raspberries and 1 scoop of raspberry sorbet; freeze until ready to serve.
Just before serving, top each parfait with 1 tablespoon of whipped topping, 2 tablespoons of fresh raspberries and mint.
