Denver Scramble serves 4 In a skillet cook ham, green pepppers and onion in butter for 5 min. on medium heat. Beat together eggs and milk then add 1/4 tsp. of salt and a dash of pepper. Add this to the skillet. Cook without stirring until the mixture begins to set on edges and bottom. Lift and fold the egg mixture so uncooked portion can be cooked. Continue cooking for another 4 minutes. Serve immediatly.

Apple Butter-Milk Muffins
Start the day right with these healthy buttermilk muffins. Apples give this recipe added flavor and texture. You can even add walnuts for a real crunch!
Ingredients
2 cups all-purpose flour
1/2 cup packed light brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/4 cup vegetable oil
2 teaspoons vanilla extract
1 large egg
2 medium-size Golden Delicious or Winesap apples, peeled, cored, and diced (about 2 cups)
1/2 cup walnuts, chopped (optional)
1 tablespoon sugar
1 teaspoon ground cinnamon

1. Preheat oven to 400� F. Grease twelve 2 1/2 x 1 1/4 inch muffin-pan cups

2. In large bowl, mix first 5 ingredients. In small bowl, with wire whisk or fork, beat buttermilk, vegetable oil, vanilla extract, and egg until blended; stir into flour mixture just until flour is moistened (batter will be lumpy). Fold in apples and walnuts

3. In cup, mix sugar and cinnamon. Spoon batter into muffin cups; sprinkle with cinnamon sugar. Bake muffins 25 minutes or until toothpick inserted in center of a muffin comes out clean. Immediately remove from pan; serve warm, or cool on wire rack; reheat if desired.
Pancakes with Caramelized Apples
These pancakes get topped with apple slices and sugar and then are broiled until crisp. Serve for breakfast or as part of a brunch buffet.
Ingredients
1 1/2 cups all-purpose flour 1 1/2 teaspoons baking powder
1/2 teaspoon baking soda 1/4 teaspoon salt
3 tablespoons granulated sugar 2 1/2 cups buttermilk
4 large whole eggs 2 tablespoons melted butter
2 Granny Smith apples, peeled and cored butter, as needed.

1 Preheat broiler. Combine flour, baking powder, baking soda, salt, and 1/3 of the sugar in a bowl; stir well. Make a well in the center of the flour mixture; add buttermilk and eggs to the well. Stir until smooth. Add melted butter; whisk until smooth.
2 Slice apples into 1/4-inch thick rings.
3 Melt a small amount of whole butter in a saut� pan over medium heat. Spoon about 1/3 cup batter into a saut� pan, forming a pancake about 4 inches in diameter. Cook until top is covered with bubbles and edges look cooked. Continue with remaining batter, adding butter to the pan as needed. Cook as many pancakes as possible at one time without overcrowding the pan.
4 Transfer pancakes to a baking sheet, cooked side down. Top each pancake with an apple slice and sprinkle each slice with 1/2 teaspoon of the remaining sugar. Broil until sugar melts and the edges of the pancakes are brown, about 5 minutes. Stack pancakes on plates; serve immediately.
