Chocolate - Food of the Gods     

     The Aztecs claimed that their god, Quetzalcoatl, introduced the cacao bean to them.  Consumed as a drink, chocolate was reserved for nobility and warriors.        

     
The Swedish botanist, Linnaeus, named the cacao tree Theobroma cacao, the food of the gods in the 17th century.

      Chocolate is made from the seeds of cacao tree pods.   The seeds are  processed into cacao butter, cacao liquor and chocolate.  The flavor of  chocolate comes from the bean as well as from the ratio of cacao butter to chocolate solids.  The higher the percentage of both cacao butter and chocolate solids, the stronger the flavor.  Milk chocolate has a milder flavor than bittersweet chocolate which has the highest percentage of both ingredients.
