Vegetable Wraps

Ingredients:

1 Tbls. peanut oil
2 cloves garlic
3/4 cup peeled, julliene, brocolli stalk
1 cup grated carrot
1 red pepper
1 cup sliced green onions
1/2 cup diced mushrooms
4 egg whites, slightly beaten
1 cup bean sprouts
1- 8 oz. tofu firm, cut into strips
1/4 cup fresh cilantro
1/2 tsp fish sauce
18 inner romaine lettuce leaves
2 cups cooked rice


In a skillet, heat oil on medium heat, add brocolli, carrot, pepper, green onions, and mushrooms.

Cook and stir till brocolli and carrots are soft, about 10 minutes.
Add egg whites and stir gently till cooked.
Take off heat, add bean sprouts, tofu, cilantro, and fish sauce.
Wash lettuce leaves.


Peanut Sauce


1 cup onions
2 cloves garlic, minced
2 Tbls grated ginger
3 Tbls oil
1 cup peanut butter
1 1/2 cup water
1/4 cup soy sauce
2 Tbls honey

Mix all ingredients thoroughly. Cook in sauce pan over medium heat till sauce thickens.

 

How to eat

Use lettuce leaves like a tortilla, fill with veggie stuffing, rice and peanut sauce.
Then eat! It's unbelievably delicious, even people who are not vegetarians really love
this dish. It's particuraly great to serve when you have alot of people over.
This recipe will comfortably feed 6 people.
