Salmon Cakes
Vegetable or canola oil, for frying
3 - 6 oz. portions cooked salmon or 3 - 6 oz. cans salmon, drained well
1 1/2 cups bread crumbs
2 large eggs, beaten
1 red bell pepper, seeded and finely chopped
20 blades fresh chives, snipped or chopped or 1 onion
2 to 3 tablespoons fresh dill
1 teaspoon red pepper flakes
1 lemon, zested and juiced
Heat oil in pan
over medium heat, combine all other ingredients, except lemon.
Shape into patties, cook on both sides for about 5 minutes each.
Take off heat and drizzle lemon over patties.
Serve this with a mustard- mayo sauce.
