Coconut Curry Shrimp
2 Tbls oil
1 medium onion
2 Tbls yellow curry, the best you can find
1 can coconut
milk
2 cup water
2 white potatoes, cut into chunks
1 sweet yam, cut into chunks
1 green pepper
1/8 cup green peas
1/8 cup kernal corn
2 lbs shrimp, larger the better
Heat oil in deep
pan over medium high heat. Add onion, cook till tender.
Add curry powder. Cook for 2 minutes. Add coconut milk.
Bring to a boil, add water, bring to boil again.
Add potatoes, yams, green pepper. Bring to a boil, turn down heat to low.
Simmer for 15 minutes, add green peas, corn, and shrimp.
Cook for 10 minutes. Serve over rice.
