Banana- Coconut- Apple Foster

 

3 bananas
1/4 cup coconut flakes
2 apples, preferably Fuji
2 cups sugar
1 cup juice, apple juice is good
1 cup water

Cut bananas lengthwise. Peel, core, and cut apples. Put aside.

Melt sugar in shallow pan till a liquid brown over medium high heat. Add juice, stir and decrease heat to low.

Add apples and coconut flakes. Let simmer for 3 to 4 minutes, add bananas, cook another 3 minutes, then add the water. Stir gently not to mash
any of the apples or bananas.

Serve right away with crepes or pancakes.

Best Ever Pancakes

 

3 eggs, separated
1 1/2 cups all-purpose flour
1/4 cup sugar
1/4 cup butter, melted
16 oz. (2 cups) plain lowfat yogurt
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cinnamon


In a small bowl, beat egg whites at high speed, until stiff peaks form. Set aside. In a large mixer bowl combine egg yolks and all remaining ingredients.
Beat at medium speed, scraping bowl often, until well mixed. By hand, fold in beaten egg whites. For each pancake, pour approximately 1/4 cup of batter
onto a greased 350 degree griddle. Cook until bubbles form; turn and cook other side until light brown.

Crab Puffs


• 1 quart oil for deep frying
• 1 pound cooked crabmeat
• 1 - 8 oz. package cream cheese, softened
• 2 teaspoons garlic salt
• 2 green onions, chopped finely
• 2 -16 oz. packages small won ton wrappers



Heat oil in large, heavy saucepan to 375 degrees F (190 degrees C).

In a medium bowl, mix together cooked crabmeat, cream cheese and garlic salt.

Roll a small amount of the crabmeat mixture inside each won ton wrapper and seal.

In small batches, carefully place won tons into the hot oil.

Fry 2 to 3 minutes, until golden brown.

Drain on paper towels.

1 can coconut milk
2 Tbls oil
1 medium onion
2 white potatoes
1 sweet yam
1/8 cup green peas
1/8 cup kernal corn
2 Tbls yellow curry, the best you can find

Oven-Fried Catfish

2 Tbls light ranch dressing
2 large egg whites
6 Tbls yellow cornmeal
1/4 cup grated fresh Parmesan cheese
2 Tbls all-purpose flour
1/4 tsp red pepper flakes
1/8 tsp salt
4 - 6 oz. farm-raised catfish fillets
Cooking spray


Preheat oven to 425°.
Combine the dressing and egg whites in a small bowl, and stir well with a whisk.
Combine the cornmeal, cheese, flour, pepper, and salt in a shallow dish.
Dip fish in egg white mixture; dredge in cornmeal mixture.
Place fish on a baking sheet coated with cooking spray;
bake at 425° for 12 minutes on each side or until lightly browned and fish flakes easily when tested with a fork.
