Since than they have been making the “champagnes” under the beers, near
Brussels: Gueuze
Lambiek, Kriek Lambiek and Framboise Lambiek.
The father of these beers is Lambiek. A natural beer with a fresh and sour
taste, that can only be brewed in the Zennevallei. Only there we have two
specific yeast cells in the air.
These cells mingle with the wort (a mixture of wheat, malt, water and hop).
They automatically trigger off the fermentation. This gives the Lambiek his
special taste.
