Viennese Roast - Darker than standard American roast, but lighter than Espresso.  Makes a strong, full-bodied cup with spiciness.

Cafe' de Olla    serves 4
4 cups cold water
1/2 cup coarsely ground Viennese roast coffee
1/2 cup dark brown sugar
1  4-inch cinnamon stick
4 whole cloves
peel from 1/2 of an orange, sliced

Place the water in a small sauce pan over high heat and bring it to a boil.  Reduce heat slightly and add the coffee, sugar, cinnamon stick, cloves and orange peel.  Gentlely simmer for 5 minutes, then stir in 1/2 cup cold water.  Strain through a paper coffee filter into a warm pot.  Serve immediately in warm clay mugs.
