2 cups flour
1/2 cup confectioner's sugar
2 sticks sweet butter, softened
Pinch of salt
1 cup pecans, finely chopped
1 teaspoon vanilla extract
Mix the flour, sugar, salt and nuts together. Stir in the vanilla. Work the butter into the mixture until it forms a ball. Shape the dough into 24 patties, place on a coookie sheet and bake in a preheated 350-degree oven for 30 minutes or until the cookies are delicately brown. Lift off the cookie sheet, cool slightly on wire racks and dust thickly with confectioner's sugar.
Variations: For cinnamon cookies, replace the pecans with 1/4 cup flour and 1 teaspoon ground cinnamon. While still warm from the oven, roll in a mixture of 2 cups confectioner's sugar and 2 teaspoons ground cinnamon sifted together; cool, roll a 2nd time.
