Carolyn's Own Gumbo
Cook together for 1 hour low heat until tender.
1 lb. Beef
1 can beef broth
1 to 2 Bay leaves
Add to beef:
Bring to a boil and cook for approximately 45 minutes medium heat.
1 lb. Chicken white or dark meat), cut in small pieces
1 lb. Diced Hillshire Smoked Sausage, browned and drained
2 cans 16 oz. Chopped Tomatoes
1 large green pepper, chopped
1 large onion and 3-4 leeks, chopped
2 to 3 stalks of celery, diced
3 cans chicken broth
1 to 2 T. Cajun Seasoning (to taste)
3 T. Gumbo File (more or less)
Salt and Pepper to taste
� c. fresh parsley
2 teas. Thyme
Water as needed
Add
10 oz. Package of Okra (more or less)
1 pkg. Zatarin's Gumbo Mix (if desired. I add this just to increase my batch.)
1 lb. Shrimp
Add:
1 lb. Crab
Bring to boil. Cook 5 to 10 minutes until shrimp turns pink.
Eat with hot rice and add:
Hot pepper sauce (if desired)
This recipe makes a lot of gumbo. What's a lot? Just plan to invite friends over or freeze for a later day.
