BUUELOS
(FRITTERS)

1 teaspoon salt
1 teaspoon baking powder
2 tablespoons sugar
4 cups flour
2 eggs
1 cup milk
 cup butter, melted
oil or fat for frying
sugar and cinnamon mixture or sugar and ground cloves

Sift all the dry ingredients together. Set aside. Beat the eggs thoroughly;
then beat in the milk. Stir the dry mixture gradually into the egg-milk
mixture; then add butter. Turn on to a lightly floured board, and knead very
gently until the dough is smooth and elastic.
Divide in about 40 small or 24 large balls. Roll these out to approximately
4 inches or 6 inches, respectively. Fry in very hot deep fat or oil (370 F.
on the thermometer) until delicately browned on both sides. Drain on paper
towels, and sprinkle with the cinnamon and sugar mixture, or with sugar and
ground cloves.
Serve as a cookie; or make a light syrup, pour over the buuelos, and serve
as a dessert.
