Tamales with Cheese and Chile Slices
Tamales de Rajas

Dough
250 grams of lard
1 spoon of salt
1/2 kilo of tamal corn mix
2 cups of chicken broth
2 tea spoons of baking powder

Stuffing
4 spoons of lard
1 onion cut in half moons
1/2 kilo of chiles Anaheim or Ortega
(burn the skin on direct fire and peel, take of seeds and make the slices)
1/2 kilo of tomatillos
1 whole onion
2 garlic cloves
3 spoons of cilantro
1/2 kilo of Monterrey Jack cheese
Salt to taste
50 corn husks washed and soaked in warm water to make them soft.


Making the Dough
Mix all ingredients but the broth and lard that should be added little by little after beating it to make it puffy.Doit vigorously and tested. a little piece of dough shoul float in water.

Stuffing.
Cook the tomatillos with the onion and the garlic and put it in the blender with the cilantro to make a salsa. I a pan, saute the 1/2 moon onions and the chile slices with the lard, add the green sauce cheking for salt and let it boil until it gets thick.


Making the tamales
Place a large spoon of dough (enough that you can wrap the corn husk), place an slice of cheese and cover it with the clile slices and a little bit of sauce. Wrap the tamales and place them in a Steamer or Tamalera for 45 minutes of until the dough comes of the husk easily.

Enjoy. it is not easy but they are delicious
