Mexican Ensalada de Noche Buena

"Mexican Salad for Christmas Eve"

1 green apple, peeled, cored, & thinly sliced
1 red apple, peeled, cored, & thinly sliced
2 oranges, peeled & sliced
1 can pineapple slices
2 small cooked beets, peeled & sliced
1 large banana
1/2 cup lemon juice
lettuce
pomegranate seeds
1/2 cup unsalted peanuts
dressing
6 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon sugar
pinch of salt


Sprinkle all the fruit with lemon juice to
prevent from browning.

Whisk together the dressing ingredients.

Line a platter with lettuce.

Arrange the fruit and beets in concentric,
overlapping circles, finishing with the bananas.

Pour the dressing over the top.

Sprinkle with the pomegranate seeds and peanuts.
