Sopa de Nopales
A very Mexican start up with the benefits of the nopal that have proven an important effect in our health.

6 raw nopales or a medium size can.
1 tomato finely chopped.
2 cloves of garlic.
4 hard boiled eggs.
1 fresh egg.
1/2 onion.
1/4 cup of parsley.
1 small bar of butter.
1 quart of chicken broth.
salt to taste.


Clean the nopales if raw and cut them in long stripes. If they came in a jar, just rinse them. Fry them in the butter. Add the chicken broth and the parsley, the garlic,  the chopped onion the tomato and the salt to taste. Let it boil for 15 minutes and add the raw egg that will get done in the soup. Garnish it with the hard boiled eggs in halves and buen provecho!!!
