Mexican  Red Rice
Arroz Colorado


Ingredients

1 onion, chopped
1 clove garlic, minced
3 tablespoons cooking oil
1 cup uncooked rice
2 cups bouillon, or more if needed
1 cup tomato puree
1 tablespoon minced parsley


Cook onion and garlic in oil until golden. Add rice and cook until colored, then add remaining ingredients and cook, covered, over low heat. After 12 minutes, check and add more bouillon if necessary. Re-cover and cook until rice is tender and liquid is absorbed.
