PAN FRIED HAM STEAKS


If you like ham...it's it's quick and easy...

2 ham steaks, any brand
Little bit of brown sugar
Little bit of maple syrup
itty bitty bit of garlic powder...
butter or margarine

get fry pan nice and hot, (non stick is the best, learned the hard way on that one) and fry 'em up...

I like mashed potatoes and maple/brown sug carrots to go along...


CHICKEN PASTA AND 
VEGETABLE CASSEROLE


This is a chicken/veggie/pasta dish and it's so good...The prep time is a bit long, but the end result is soooo worth it!

Stuff Needed:
1 pound of boneless chick breasts (or more) 
   depending on qty of people.
1 sweet onion
1 can of olives or 2 small pre sliced to save time
1 container of "grape" or "cherry" tomatoes sliced
1 large red bell pepper, sliced it up
1 large green bell pepper (optional)
1 medium zucchini squash sliced and then in half again
1 medium summer (yellow) squash same as above
1 pound of pasta (or more) what ever your pleasure..
   I like angel hair and bowties....
Chopped Garlic, to taste

Spice stuff etc: You are also making your own pesto per se so olive oil is essential, cooking wine or the real stuff, any alcohol cooks out...little bit of Italian dressing to "kick it up a notch"

Meat Rub/marinade....rub the chicken in garlic powder, onion powder, celery salt, and tarragon. Marinate in Worcestershire, lemon juice, It dressing and whatever else strikes your fancy ..you will be grilling the chicken

Now for the veggies:
You have already sliced and diced. Next step is to sauté, I have found through trial and error that sautéing in order of hardness works great. Before you sauté, combine the onions and peppers bowl mix olive oil and spices start in hot sauté pan throw in some wine too, then mix the squashes, same way, then lastly the tomato and olives...you don't need a lot of oil, the veggies create juice as they are sautéing, make sure you add enough spices/wine and Italian dressing...put aside when done.

Boil up pasta

Grill up chicken You will need to cut chicken up after done grilling, its messy but easy..

Get huge bowl combine everything together and PIG OUT....

The combination of the grilled chicken flavors as well as the "pesto" sautéed veggies is really good...it is a lot of work, but well worth it....

I made it for the mill for lunch one time, they went nuts..

OH, and its also great cold....

I love cooking w/ spices and marinating and this particular recipe took a few summers to get right...The only calories you're really getting is from the oil, but, it's not bad calories, and a bit of sodium from the spices, not too much

As always, you can omit or add anything to your particular liking
