Lavender and Champagne Sorbet
1 C. white wine
1C. water
Juice of 2 lemons
4 egg whites well beaten
1 C. caster (superfine) sugar
1/2 C. stalkless lavender flowers, crumbled into powder
Blend all ingredients til well mixed. Freeze the mixture, stirring every 20 minutes during the freezing process.
Serve slightly slushy.
