Lavender Cookies
1/2 cup unsalted butter
1/4 cup granulated sugar
1 1/2 cups flour
2 T. fresh lavender
2 T. Superfine sugar
1. Cream together the butter and sugar until fluffy. Stir in the flour and lavender and bring the mixture together in a soft ball. Cover and chill for 15 mins.
2. Preheat the oven to 400. Roll out the dough on a lightly floured surface and stamp out about 18 cookies using a 2 inch cookie cutter. Place on a heavy baking sheet and bake for about 10 mins, until golden.
3. Sprinkle with sugar then leave the cookies standing for 5 mins. To set. Using a metal spatula, transfer to a wire rack for complete cooling.
