| Grilled Chicken Kabobs Prep: 10 min, Marinate: 2:00, Cook: 15 min. 1/4 cup water 2 Tbs. soy sauce 2 Tbs. lemon juice 1 Tbs. honey 1/4 tsp. garlic powder 1/4 tsp. ground ginger 4 boneless skinless chicken breast halves, cut into 1-1/2 inch pieces skewers 1 green bell pepper, seeded and cut into 1-1/2 inch pieces 1 onion, quartered 8 large mushroom caps Combine first 6 ingredients in a glass baking dish. Add chicken and turn to coat. Cover and marinate at least 2 hours in refrigerator. Prepare grill. Remove chicken from marinade and boil marinade 10 minutes in a saucepan. Alternate chicken and vegetables on skewers. Grill 6 inches from medium hot coals 15-20 minutes, or until done, turning and basting often with marinade. | Corn Bread Muffins 1 1/4 cups all purpose flour 1 scoop unsweetened protein shake powder, soy based, see your local health food store 3/4 cup cornmeal 2 tsp. baking powder 1 tsp. salt 4 Tbsp sugar or 6 packets of sweetener 1 tsp. chili powder 1 1/2 cups soymilk 2 T. vegetable oil Preheat your oven to 400�F and use fat free cooking spray on an 8"x8" square pan. Combine flour, protein powder, cornmeal, baking powder, salt, sugar, and chili powder in a bowl, and set aside. Combine soymilk and oil in another bowl. Add the flour mixture into soymilk mixture, stirring until just moistened and lumpy. Don�t stir until smooth. Pour into baking pan and bake for 25 minutes. You can also bake these in cup cake baking cups, or in mini muffin pans to serve with chili. Raisin Apple Muffins 1 cup unsweetened applesauce 1 cup unsweetened orange juice 3 sweetener packets 2 Tbsp Vegetable Oil 1 Tbsp Brown Sugar 2 cups whole wheat or white flour 2 scoops soy protein powder 1 tsp baking soda 1 tsp cinnamon � cup or more � raisins Combine all ingredients except raisins. Mix well, then add raisins. Bake in cup cake cups, or muffin pan lightly sprayed with fat free cooking spray at 350 for 25 minutes. |
