Roasted Veggies
This is so easy and yummy. Especially good on a cool night and it smells wonderful while it is baking.
Pick some veggies you like, clean, then cut as listed below:
Sweet potatoes (cut in half crosswise)
White potatoes (any kind, cut in half crosswise)
Asparagus (break off ends, leave whole)
Beets (leave whole)
Zucchini (cut into 1 inch thick slices)
Squash (cut into 1 inch thick slices)
Onions (Cut medium size onions into quarters)
Carrots (cut in half crosswise)
Bell peppers (halve and remove seeds)
Garlic (leave whole, remove papery skin)
Cauliflower (cut into 1 1/2 inch florets)
Brussel sprouts (cut in half crosswise)
Spray baking pan (cake pan or roaster will work). Heat oven to
425 -500 degrees (use higher temp only if you are in a hurry).
Drizzle with olive oil.
Bake for about 20 minutes and then check for doneness by poking
with a fork. Asparagus or other less dense veggies will cook
quicker. Cauliflower, beets and garlic will take 30 minutes or
more.
These are so yummy you won't need any sauce, butter or other
condiments.
