Peanut Butter Fudge

1 cup plus 3 tablespoons creamy or chunky peanut butter
1 cup butter (no substitutes)
3-1/2 cups confectioner's sugar
1 tablespoon vanilla extract

Butter an 8-in. square pan. In a saucepan, combine the peanut butter and butter. Cook and stir over medium heat until blended. Remove from the heat; stir in confectioner's sugar and vanilla (3 tablespoons baking cocoa may be added for Peanut Butter Cocoa Fudge.) Spread into 8-in. square pan. Freeze for 30 minutes or just until firm, cut into squares. Store at room temperature.
Yield: about 2 pounds

Do not make this if you are going to be home alone for an extended period of time. You might gain a couple pounds.
