English Worchestershire Sauce
This makes enough to share with friends, if you don't use W sauce very often, keeps well in the fridge. Make sure you mark the container so you don't accidentally pour it on pancakes. :-)
4 2/3 cups sugar
1/4 teaspoon salt
2 Tablespoons gound ginger
2 Tablespoons ground cloves
1 teaspoon cayenne pepper
2 cups water
2 cups cider vinegar
(1 orange seeded and cut up may be added if you have one)
Bring to a boil. Reduce heat and simmer 2 hours, stirring often. Cool. (Strain, if you use the orange) Makes 128 ounces
