Salsified Garden Salad
You should feel free to add other items or change amounts but you probably want to use about 2 cups of tomatoes regardless of what else you use. Also, this does NOT keep well it should be eaten or tossed within 3 days.
1 large yellow tomato, use red if you can't find yellow, chopped
2 medium roma tomatoes, chopped
1/2 cup onion, Vidalia, red Spanish or green with tops, chopped
2 cloves garlic, finely chopped
1-2 tablespoons jalapeno chili or banana pepper, minced
1/4 teaspoon cumin
1/4 teaspoon paprika
1/4 teaspoon black pepper
1 medium bell pepper, red, yellow or green, chopped
1-2 medium cucumbers, thin sliced or chopped
1 tablespoon lemon juice
3 tabelspoons red or white vinegar
Stir together in a large bowl.
Serve immediately, or refrigerate in a tightly covered container for 2-3 days.
