Hot German Potato Salad

This recipe is passed down from the Cook family. As I recall it one day my Mom wanted to make thie but she could not find a recipe. She called Grandma Glee and found out how to get started with the potatoes. At that time we lived just down the road from Grandma Glee so, I walked to her house to get the details of how to finish the salad. She took down the recipe book which she and Aunt Aliance had put together. The pages were wallpaper samples and they had hand copied recipes here, some were from their Mom Theda and I think this was one of hers. Here is the recipe word for word as written by Grandma over 30 years ago.

Hot German Potato Salad

Boil 6 medium potatoes in their jackets. Peel and slice thinly.
Fry slowly in skillet, then drain on paper 6 slices bacon.
Saute in bacon fat until golden brown 3/4 cup chopped onion.

Blend in:
2 tablespoons flour
1 to 2 tablespoons sugar
1-1/2 teaspoon salt
1/2 teaspoon celery seeds
Dash pepper

Cook over low heat, stirring until smooth and bubbly. Remove from heat.

Stir in:
3/4 cup water
1/2 cup vinegar

Bring to boil, stirring constantly. Boil 1 minute. Stir in carefully the potatoes and the crumbled bits of bacon. Remove from heat, cover and let stand until ready to serve.

Amount 6 to 8 servings.
