Fruit Pie with Crumb Topping
Pastry for 9-inch pie
1/2 -3/4 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
4-5 cups fresh or frozen fruit
Prepare your favorite single crust pastry (yes, you can buy the crust already made at the store) and Crumb Topping (see below). Place pastry in a 9-inch pie plate and crimp the edges.
In a large bowl stir together sugar, flour and, if desired, spices. Add fruit. Gently toss till coated. (If using frozen fruit, let mixture stand at least 15 minutes or until fruit is partially thawed, but still icy.)
Place fruit mixture in pastry in pie plate. Sprinkle Crumb Topping over filling. (For best results place pie in refrigerator for 20-30 minutes before baking.)
To prevent overbrowning, cover edge of pie with foil.
Bake in a pre-heated (for best results heat oven for 20 minutes before baking) 375 degree oven for 25 minutes for fresh fruit (50 minutes for frozen fruit). Remove foil. Bake for 20-25 minutes more for fresh fruit (20-30 minutes for frozen fruit) or until top is golden. Cool before serving.
Crumb Topping
Stir together 1/2 cup flour and 1/2 cup packed brown sugar. Using pastry blender, cut in 3 tablespoons butter till mixture resembles coarse crumbs. 1 teaspoon cinnamon may be added to dry ingredients if desired.
