No Bake Cookies (Chocolate Fudge Coconut Cookies)
4 cups white sugar
1/2 cup cocoa
1 cup milk
1 cup margarine
6 cups oatmeal (quick cook)
2 teaspoons vanilla
1 cup peanut butter (crunchy is best)
1 pkg. coconut (16 oz?)
Place sugar, cocoa, milk and margarine in medium size sauce pan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil for 1 minute, stir occasionally. Remove from heat and add oatmeal, vanilla, peanut butter and coconut. Stir until well blended. Pour onto jelly roll pan. Let cool, cut and eat!
