Molasses Cookies

3/4 cup shortening
1 cup brown sugar
1 egg
4 Tablespoons molasses
2 1/4 cup sifted flour
1/4 teaspoon salt
2 teaspoons baking soda
1/2 teaspoon ground cloves
1 teaspoon cinnamon
1 teaspoon ginger

Cream shortening, sugar, egg and molasses in a mixing bowl. Sift remaining ingredients together and add to creamed mixture. Add extra ginger if desired. Shape in walnut-size balls and roll in raw or coarse white sugar just before baking. For an extra cracked top dot with a drop of ice cold water just before popping the cookies into the oven.
Bake at 375 for 12-15 minutes.
Makes 3-4 dozen cookies.
