Red Velvet Cake
Purchase a Duncan Hines French Vanilla Cake Mix.
Add 3-4 Tablespoons of cocoa to the mix.
Use Egg Beaters in place of eggs.
Use applesauce instead of oil.
Pour a 1 ounce bottle of red food color into
a 1 cup measuring cup and fill with water.
Follow package directions for mixing and baking.
Cooked Buttercreme Frosting
Do NOT SUBSTITUTE margarine for butter.
1 cup fat free milk
7 Tablespoons all-purpose flour
12 Tablespoons light butter, chilled
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
Cook milk and flour in a small heavy saucepan over medium heat 2 1/2 minutes or until very think, stirring constantly with a whisk. Spoon into a bowl, cover and chill thoroughly.
Beat butter and chilled mixture at medium speed of a mixer until smooth.
Gradually add sugar, and beat just until blended. Do not overbeat.
DO NOT OVERBEAT. Stir in vanilla; cover and chill.
Makes 2-1/3 cups.
