Potato Pancakes

A Krueger family favorite since 1984.

3 cups cubed raw potaotes
2 eggs
1/4 cup flour
1 teaspoon salt
1/4 teaspoon baking powder

Wash, peel and cut up potatoes. Pat dry with paper towel. Put 1/2 of all ingredients into container. Blend 10 seconds. Stop and push down as necessary. Add more of the ingredients; mix until all ingredients are in container. Pour batter onto greased hot 325 degree griddle. 1/4 cup mix per pancake.

Brown and turn once to brown other side.

Serve with butter and just enough sugar to lightly coat the top of the pancake. MMmm good!
