Breakfast Bake
Preheat oven to 350 degrees. Bake in greased 11"x7" baking dish.
1 pound bulk sausage, browned, drained and cooled
2 slices bread, cut into 1/2-inch cubes
1 cup frozen hash brown potatoes, thawed
1/2 cup diced red or green pepper or 1 Tbsp. jalepeno pepper
1 cup (4 oz.) shredded cheddar cheese
6 eggs
2 cups milk
1/2 tsp. salt
1/8 tsp. pepper
Spread bread cubes and potatoes in baking dish; top with sausage, peppers and cheese. Beat eggs, milk, salt and pepper together. Pour over previous ingredients. Bake 30 to 40 minutes or until set. Let stand 5 minutes before cutting and serving. Refrigerate leftovers immediately.
