Spinach Dip - Hot

1 Tablespoon butter
1/4 cup finely chopped onion
1 clove garlic
1 cup cottage cheese, pureed or ricotta cheese
1 8-ounce package cream cheese, cut up
1/2 cup milk
1/2 cup salsa
1 Tablespoon lemon juice
2 10-ounce packages frozen chopped spinach, thawed and well drained
4 slices bacon, crisp cooked, drained and crumbled
1 cup shredded cheddar

In a saucepan, saute onion and garlic in butter until tender. Add cream cheese and cottage or ricotta cheese and milk; cook and stir until smooth. Stir in spinach, salsa and lemon juice; heat through.

Grease slow cooker. Pour ingredients into cooker, top with bacon and cheddar cheese, cover, and cook on low setting for 4-5 hours or on high for 1 hour.

Second choice for cooking �
Transfer ingredients to a greased 8-inch square baking dish. Top with bacon and cheddar cheese. Bake, uncovered at 350� for 20-25 minutes or until heated through.

Serve with vegetable sticks or corn chips.
