Waldorf Salad
5-6 apples, unpeeled, cored and diced

2 tablespoons lemon juice

1/3 cup chopped walnuts

2 stalks celery, chopped

1/2 cup raisins

1/4 cup shredded coconut

3 tablespoons hulled sunflower seeds        (optional)

1/2 cup mayo or other salad dressing

1/2 cup natural (plain) yogurt
Pour lemon juice over diced apples and toss until well coated.  Mix apples, nuts, celery, raisins, coconut and sunflower seeds.  Beat dressing (mayonnaise) and yogurt until smooth.  Pour over salad and toss well.

Serve chilled.  Makes 4 servings.
