Some of my favorite recipes are listed below
            Zucchini Pancakes

3 cups grated zucchini (approx 3-4 small)
1 small onion finely chopped
2 eggs lightly beaten
2 tablespoons flour
cooking oil, butter, or non-stick pray
lemon pepper seasoning
1/4 teaspoon salt

In a medium sized bowl, mix grated zucchini, onion and eggs. Add flour and mix thoroughly.  Heat skillet or griddle and add oil, butter or non-stick spray.  Spoon small amount of zucchini mixture onto griddle forming a 3" in diameter sized pancake by pressing mixture with a spatula or pancake flipper.  Allow to lightly brown and then flip browning the other side.  Serve hot with butter and lemon pepper seasoning. 
Makes approx. 9 pancakes.
Note:  Small zucchini are much more tender & don't have tough seeds.
Cheeseburger Pie
           
Heat oven to 400*   Prep time:13 min     Bake time 25 minutes

1/2 lb ground beef
1 cup chopped onion                          1 cup milk
1/2 tsp salt                                            1/2 cup Bisquick baking mix
1cup broccoli shopped                       2 eggs
1 cup shredded cheddar cheese

Cook ground beef and onion; drain fat.  Stir in salt and broccoli. Spread in greased 9" pie plate; sprinkle with cheese.  In a seperate bowl Stir remaining ingredients with fork until blended.  Pour into pie plate on top of ground beef mixture. 
Bake 25 minutes in a 400* oven or until knife inserted in center comes out clean.  
Makes 8 servings.
          Cherry Squares

3 cups flour
1 cup sugar
1 cup shortening
1/2 tsp. salt
1/2 tsp. baking soda

Heat oven to 350*

2 eggs beaten
2 cans cherry pie filling

Mix flour, sugar, shortening, salt and baking soda like pie dough using a pastry blender.  Do not over mix. (Mix should be very crumbly having pea sized crumbs)  Add eggs and mix.  Spread dough on bottom of jelly roll or lasagna pan saving 1 cup of dough for topping.  Add pie filling spreading over dough until even.  Sprinkle remaining dough over fruit and bake for 25 to 30 minutes in a 350* oven. 
Let cool and cut into squares.  ENJOY!!!
