Cindi's Chili Recipe
Ingredients:

1 pound lean ground chuck

2 stalks celery chopped

1 medium onion chopped

1 clove garlic minced

2 cans or jars of stewed tomatoes chopped into small pieces (about 32 ounces total)

1/4 teaspoon salt

1/8 to 1/4 teaspoon ground hot red pepper seasoning depending on your taste

dash of sweet basil and oregano

2 cans tomato soup (condensed)

2 cans flavored chili beans (I use the 'hot - n - spicy' ones)

Saute ground chuck in large skillet, over medium heat, breaking into tiny pieces while it cooks.  Add onion, celery and garlic just before ground beef is finished browning.

Add stewed tomatoes and the juice from the tomatoes.  Stir in salt, red pepper and other spices.  Lower heat a little and allow to cook, uncovered for 20-30 minutes, stirring occasionally.
(Be sure not to allow all of the juices to cook away)

Keep heat at low to medium setting while stirring in tomato soup and chili beans.  Cook for another 10 minutes stirring often.

Serve with grated cheddar cheese and fresh italian bread.

Makes about 6-8 servings.
