Button or white mushrooms, agaricus bisporus, are the cultivated variety of field mushrooms, agaricus campestris, and the most common mushroom grown and sold in the United States. Also called the 'pizza mushroom,' they have an extremely mild flavor which intensifies greatly when cooked. The white mushroom is extremely versatile. They are a good addition to soups, stir-fries and pasta dishes or they can be sautéed to top meat or poultry. Also ideal for use in stir-fries, on pizzas and with pasta or rice. They are also excellent for use in pies and casseroles and to serve as a vegetable.
