This condiment goes very well with raw vegie like cucumber, ulam,
salted fish & white rice.

Ingredients:

3 large red chillies,
cut into 2 cm lengths |
|

5-8 cili padi
(more if you want it really spicy |
|
|
1 rounded tsp roasted
belacan |
|
|
1/2 tsp salt |
|
|
1-2 tsps sugar |
|
|
1 tsp assam jawa
or tamarind paste, mixed with 3 tbsps water to obtain juice |

Method:
1. |
Pound chillies &
belacan together until a fine paste is formed. Add sugar, salt &
assam jawa. Taste & adjust seasonings, add more salt &
sugar if needed. |

Serve sambal
belacan in a small bowl alongside a platter of raw ulam or
herbs & vegetables like kacang botor, petai, ulam raja, pegaga,
daun selasih (local basil leaves) and cucumber slices. Fried
salted fish is another favourite accompaniment. |

Pour chilli paste
into the wok and turn fire to low, cook until the oil separates
stirring all the time to prevent burning. |
4. |
Add petai &
ikan bilis cooking for 2-3 minutes. |
5. |
Add tamarind juice,
sugar & salet. If sambal looks dry, add 0.5 cup water. Simmer
for another 5 minutes and season to taste. |
