Ingredients:

2 tbsps oil |
|

4 chicken drumsticks |
|
|
|
4 chicken thighs |
|
|
|
1 large onion, sliced |
|
|
|
2 cloves garlic, crushed |
 |
|
|
1
1/2 tsps ground rosemary |
|
|
|
10 baby potatoes, halved |
|
|
|
2 medium tomatoes,
chopped roughly |
|
|
|
1 small green capsicum,
chopped |
|
|
|
1/2 cup of water |
|
|
|
1 chicken stock cube |
|
|
|
150 gm button mushrooms,
halved |
|

Method:

1. |
Heat half the oil in
a large baking dish. Add chicken, in batches & cook until
lightly. |

Heat remaining oil in
the same dish. Add onion & garlic. Cook stirring until
onion is soft. |
|
3. |
Return chicken to
dish with rosemary, potatoes, tomatoes, capsicum, water, curmbled
stock cube & mushrooms. Bring to a boil. |

4. |
Cook, uncovered, in a
220°C oven,
for 45 to 50 minutes. Serve hot. |
